A robust wine with flavors of chapparal, leather and black curratn. The Blends structure combined with subtle influences from the American Oak adds depth and compexity, making it an ideal pairing with grilled meats, hearty stews or rich savory dishes.
PRIMARY FERMENTATION TOOK PLACE IN UPRIGHT FOUDRE WITH ON-SKIN FERMENTATION. ALL THE GRAPES WERE HARVESTED ON THE SAME DAY AND CO FERMENTED FROM THE VERY BEGINNING. THE WINES AGED IN A COMBINATION OF 25% NEW AMERICAN OAK AND 75% NEUTRAL OAK, AND AFTER FERMENTATION, IT WAS RACKED INTO ONE LARGE FORMAT FOR FINAL AGING.
